Ingredients:
- 1 avocado, chopped
- 2 tsp. lime juice
- 2 cans (11 oz) shoe peg corn, drained
- 1 can (15 oz) black beans, rinsed and drained
- 2/3 cup cilantro, chopped
- 2 roma tomatoes, chopped
- 2/3 cup green onions, chopped
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. cumin
- Scoops tortilla chips (work best)
- Slices of zuchini, summer squash, jicama, dajon radish
Preparation:
Toss avocado with lime juice in medium bowl. Stir in remaining ingredients. Chill for at least 1 hour. Makes 20 (1/4 cup) servings.
